Vegan Goodness:
Today we ate:
- Breakfast: An Odwalla “green power” smoothie for LP, and then oatmeal and toast for LP, Mom and Dad
- Lunch: We all enjoyed a delicious vegetable soup (made vegan with veggie broth) prepared by LP’s Grandma. LP dipped lots of yummy crackers in his soup!
- We all snacked on some hummus and chips before dinner. Mom, Dad, Grandma and Grandpa also enjoyed some wine!
- Dinner: Spaghetti with marinara sauced (kicked up a notch with lots of veggies and mushrooms), salad with chickpeas and some avocado on the side for LP. LP chowed down – he was a hungry dude!
Money Matters:
We enjoyed a low-key day at Grandma and Grandpa’s house. LP got to visit a pond with ducks and play with Grandpa in the backyard. No money was spent!!
Monday Munchies: Check out Vegan MoFo
October is a special month – the Vegan Month of FOOD! Vegan bloggers the world over are blogging about food, cookbooks, and vegan life overall. I’m bummed not to be participating this year like I did last year at my other blog, but we are traveling and juggling two kids, so it didn’t seem like the best time. However, I am going to share some of my favorite posts and blogs from VeganMoFo right here at Vegan Mama!
Check out one of my favorite blogs Cadry’s Kitchen, where she is posting about themed vegan dinner parties. The first week is The Wizard of Oz dinner party – I can’t wait to make the first two recipes.
One of my new Vegan MoFo finds is Cooking the Vegan Book, where they are blogging about how to use up all those cool ingredients you pick up without having a good plan to use them. I already have some ideas for banana leaves!
And if you want to check out the blog roll yourself, here is all the info you need for Vegan Mofo!
