Recipe: Great Garlicky Spinich

was really in the mood for some serious garlic last night.  Enter some super spinach paired with great amounts of garlic!  We are the second week into CSA season, and I was able to use some spring garlic and our pound of spinach from the local farm.  This was a perfect side to our grilled polenta, but it could also be a great base for a white bean dish, or even the topping to some pasta and pesto.  Be prepared – you will be able to ward off vampires with a single breath after eating this delicious dish!

Great Garlicky Spinach

Ingredients:

  • 1 lb of spinach (washed and chopped)
  • 8 cloves of garlic, minced (I have also used 1 head of spring garlic, plus 4 cloves of regular garlic)
  • 1 tsp olive oil
  • 1/2 tsp red pepper flakes
  • 2 TB white wine

Directions:

1. In a large saucepan heat up the oil on medium.  Saute the garlic for 2-3 minutes, until it starts to brown.

2. Add the red pepper flakes and saute for another minute.  Turn the heat up to medium high and deglaze the pan with the white wine.

3. Turn the heat back down to medium.  Add half the spinach, cover, and cook for 2 minutes.  Add the rest of the spinach, toss, and cook for another two minutes.

4. Take the cover off and cook the spinach, uncovered, for 5-10 minutes, tossing occasionally.
