I like my weeknight dinners, fast, easy, and cheap.
Wow, that sounded a little . . . well, you know. But it’s still true, and I’m excited to spend March sharing what I know about how to keep dinner, well, let’s just say “simple and quick.”
Vegan Mama Month of Meal Prep!
This fall, when I went back to work after maternity leave, I made a commitment to do more meal prep on the weekend so that we could have quick and easy dinners during the week. This has resulted in less stress after work, more enjoyable family meals, and fewer dishes! This month I’m going share tons of tips for both meal planning, and how to use weekend prep time (2 hours or so of cooking) to set up easy-peasy weeknight meals.
There will be four weeks that take you through what I’ve learned about meal planning and meal preparation. Every week I will share:
- Our menu for the week
- A grocery list for the meals we are making
- A step-by-step guide to prepped for this weeks meals
- Recipes for great make-ahead meals and fast weeknight dinners
- Tons of tips!
