Ultra-chocolate Vegan Brownies

Of all the baked goods I’ve tried to “veganize” brownies have been the trickiest. My first attempt ended up with a dense cookie-like slab that very strongly resembled Snackwells Devil’s Food cake. Not a hit. Other versions have just been altered chocolate cakes. I finally adapted a Vegetarian Times recipe to match our level of chocolate (high!) and sugar (low!) preferences.

Ultra-chocolate Vegan Brownies

Ingredients:
2/3 cups vegan chocolate chips (Trader Joe’s are vegan!)
1/3 cup canola oil
2/3 cup sugar
1 tsp. vanilla extract
2 tablespoons cocoa powder
1 ½ cups all-purpose flour
1 tsp. baking powder
1 tsp. cornstarch
½ tsp. salt

Directions:
1. Preheat oven to 350°F. Coat 9-inch square pan with cooking spray.

2. Melt chocolate with oil in saucepan over low heat. Stir in sugar, 1/3 cup water, and vanilla.

3. Combine flour, cocoa baking powder, cornstarch, and salt in bowl. Stir flour mixture into chocolate mixture. Spread in prepared pan. Bake 20 minutes. Remove from oven, and cool.
